DEEP ROOTS IN MICHELIN KITCHENS, FROM THE COTWOLDS TO CANADA

"I spent the majority of my career (14 years) at repeatedly Michelin starred The Manor House in Castle Combe, UK. Following that I spent years leading top end pastry & dessert development for premium hotel and boutique bakery shops.

I came to enchanting Canada in 2018, specifically to the picturesque village of Elora, Ontario and still reside & create here today."

Located in the ultra luxury Kat Florence Hotel in Elora, Ontario, this unique patisserie concept boasts 'infinity' style tasting exploration of Chef Collyer's daily edible art creations.

Located in the hotel's illustrious 'Living Room' space, Chef Collyer spends his days innovating spectacularly high design, fine dining flavours of his artful chocolates, pastries, cakes & more for excited guests who pop by at their leisure to discover what's new for the day. 

The Infinity Patisserie by Chef Marc Collyer is a private experience, exclusively open & unlimited to guests of the Kat Florence.
